What is the focus of your blog?
I am experimenting with low-carb cooking and baking, so that I don't have to give up so many of the flavours I love. Many of my recipes are also gluten free. It's easy once you get the hang of it!
What is the purpose of your blog?
I started this blog just prior to being diagnosed with pre-diabetes. I was already blogging about healthier alternatives, but since then I have focused primarily on low carb. I did not want to let diabetes keep me from enjoying the things I love, like cooking and baking (and eating!). I am playing with lots of alternative ingredients and learning a lot in the process. I have a few misses but for the most part, I've had a lot of success.
Tips and Tricks
- baking with nut flours and other low carb flours often requires more leavener than traditional wheat flour.
- stevia in combination with a sugar alcohol like erythritol help enhance each other's sweetness.
- you don't need to be limited by what you can buy in the supermarket...you can make your own! I've made my own chocolate chips.
