Pizza Frittata
This frittata can be for any meal. I like to make it for dinner and eat the leftovers for breakfast or lunch. To make it South Beach Friendly, omit the pepperoni or use low-fat turkey pepperoni.
Blueberry Almond Breakfast Pudding
This easy, healthy, low carb breakfast pudding can be made with any berries or other addtions as listed. Make it in the microwave in under 5 minutes.
Easy Flax Breakfast Pudding
This "pudding" can be put together in the microwave in 3-4 minutes. You can add berries or other "mix-ins" - I have lots of suggestions. The flax gives it lots of fiber and good fat, plus a nice nutty flavor.
Easy Eggs Florentine
You can make this in a few minutes for any meal.
Joe's Special, Laura Style
Every breakfast place in the San Fransisco area seems to have their version of this local classic. Here's mine.
