Low-Carb "Matzah" Balls

These "matzah" balls are made with Dixie Carb Counters Instant Mashers (note that this product contains dairy and is not certified kosher, which I realize will cancel out the whole deal for many people).

Ingredients:

  • ½ cup Dixie Carb Counter Instant Mashers
  • 1 egg
  • 3 Tablespoons oil
  • Salt
  • About ¼ cup water or so

Preparation:

Mix all ingredients, and let set for a few minutes. Adjust liquid. Roll into balls -- they should hold together, but don't put too much pressure on them. Drop gently into simmering chicken stock, soup, or water. They cook through in about 15 minutes.

Recipe makes 6 "matzo" balls.

Nutritional Information: Each ball has 1 gram effective carbohydrate plus 1 gram fiber, 3 grams protein, and 94 calories.
