Old World Cabbage and Pepper Saute

Cabbage, peppers, and spices like paprika and caraway seeds make this quick and easy vegetable dish special. I like using Penzey's Old World Seasoning, but my substitute is good, too!

Ingredients:

  • 1/2 small head of cabbage (perhaps 4 cups chopped)
  • 1 medium red Bell pepper, chopped
  • 2 teaspoons Penzey's Old World Seasoning OR:
  • 2 teaspoons paprika
  • 1/2 teaspoon garlic (or one clove garlic, minced or pressed)
  • 1 teaspoon caraway seeds
  • salt and pepper
  • Oil to coat pan

Preparation:

Heat oil in pan. Saute' pepper for a minute or two, then add cabbage. After another minute, add the seasonings. Cook until vegetables are tender. If the pan gets too dry as it cooks, add a little white wine, chicken stock, or water.

Nutritional Information: Each serving has 4.5 grams effective carbohydrate plus 2 grams fiber, 2 grams protein, and 35 calories (not counting oil).

Sauted Cabbage, etc... yum!, Guest Skudderbotch

I've made this with assorted variations for YEARS and love it. I always include onions, cabbage, but then it may vary from there... lots of times, I start with slices of Polish sausage, or Italian sausage, or diced bacon. I have made it with cubed potatoes added (leftover baked, added just long enough before serving that they heat through). Sometimes I toss the veggies into cooked noodles, for a heartier side dish casserole. There are just the two of us, so I then make soup with the leftovers (without any potatoes or noodles) by adding chicken broth, other veggie and/or meat leftovers, almost anything will work. I don't put the starches into the soup itself, however, but I put a limited amount into the soup bowl, so it's easier to measure the carbs... the hot soup heats them. Besides, they get overcooked and yucky. This basic ""sauted cabbage"" is a staple for us.
