Almond Spice Cookies

I was going for the flavors in hermit cookies with these slightly-chewy cookies. With few ingredients, they are very simple to make.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 cups almond meal (with skins works fine)
  • 1½ Tablespoons apple pie spice, or 1 teaspoon cinnamon, ½ teaspoon nutmeg, and a pinch of cloves
  • ½ teaspoon salt
  • ½ cup sugar equivalent in artificial sweetener (zero carb preferred, such as liquid sweetener)
  • 1 large egg
  • ½ teaspoon vanilla
  • 1 packet artificial sweetener (to sprinkle on top)
  • Sliced almonds (optional)

Preparation:

Heat oven to 325 F.

Combine all dry ingredients -- a whisk works well. Add the wet ingredients, and combine well, until mixture has formed a large ball.

Form balls about one inch in size. Flatten with hands or a spoon to about 1/4 inch thickness. Sprinkle powdered sweetener on the tops. Place on baking sheet covered with parchment or silcon mat. (Alternatively, grease the baking sheet.) Top with sliced almonds, if desired.

Bake for 10 to 12 minutes, or until cookies are slightly brown on bottom.

Nutritional Information: Each serving has a little over half a gram effective carbohydrate plus 1 gram fiber, 2 grams protein, and 50 calories.
