These muffins are based on Chelsie's Cinnamon Cranberry Flax Muffins. They are sweeter (but not very sweet), and not as intensely spicy.

Cook Time: 15 minutes

Total Time: 30 minutes

  • 1 and 1/4 cup flax seed meal
  • 2 teaspoons baking powder
  • 1 Tablespoon cinnamon

  • 4 large eggs, beaten
  • 1/4 cup oil
  • 1/2 cup liquid (flavored syrup or water)
  • 1 Tablespoon vanilla
  • 1 medium apple, chopped fairly finely

Love them!, Guest Jacqueline

These were awesome. I had to make a few changes since I was missing some items. I only had 2 eggs so I added a 1/2 cup of low sugar apple sauce for the other 2. I used coconut oil for the oil part. All the rest I kept the same and they came out firm but yet moist in the center with a nice nutty apple flavor. Thanks I was getting tired of the cheese cake muffins for breakfast..lol
