How to Make Low-Carb Sauces and Gravy

gravyAt this time of year, I find myself needing to thicken gravies, sauces, and casseroles. If it's just a little thickener that's needed, I can use a bit of flour (rice flour in my case since I can't eat wheat). But if it's very much flour it will add too much starch. What to do?
