Last night I did something I've been meaning to do for a long time - I took a Basic Knife Skills class. I found out I haven't been holding my knife in the best way, and I learned more about knife care and sharpening than I had before - a sharp knife makes all the difference in the world! Even though I've been cutting vegetables for decades and have watched a lot of cooking shows, I learned some new tricks last night. I'm excited, because I firmly believe one of the keys to healthy eating is to be able to quickly put a meal of fresh ingredients together. Next week, we're learning how to cut up and debone a chicken! I can't wait!
It turns out that About.com has a brand new Culinary Arts site, which I'm sure I'll be visiting often! I notice he has sections on knife cuts and knife sharpening. If you want to know how to make a stock, or clarify butter, Guide Danilo Alfaro will help you out!
