My Personal Menu Challenge

I have set myself a new challenge. Over the course of the rest of the year, I would like to write 30 daily menus that are low in carbohydrates, contain all the recommended daily requirements of vitamins and minerals (except calcium and vitamin D), are high in fiber, and cover all the different types of fruits and veggies we should be getting (different categories have different antioxidants and such - over the course of a few days we should get them all). What do you think? Can I do it? Here is my first one!

I appreciate the menu, especially so since it provides the daily requirements, but I was hoping to have a bigger variety of menus. Do you know of other sites that offer menus that fit the daily requirements without overeating in carbs?
I think the Atkins site has some.
