When we start cutting carbs, we usually find we are eating a lot more vegetables than before. What vegetables do you like to eat, and how do you fix them? Share Your Veggie Ideas

Roasted Peppers

Roasted peppers in a jar are nothing compared to freshly roasted peppers. When I was a student, I used to roast them on a gas range, blackening the skin so it would come off easily with cold water. After taking the seeds and stem off, what you are left with is a wonderfully sweet taste! I would sometimes saute them a little bit in olive oil with garlic (try roasted garlic with the peppers!) and spread them on Italian bread. Of course, we would have to use something else, but sprouted rye or wheat bread with provolone would be heaven!

Gratin de Cauliflower

Ingredients : (as much as you need of each) Cauliflower parboiled or micro-waved (in plastic bag) Mayonnaise – I prefer Helmans – but whatever low-carb you have Salt and Pepper to taste Grated Cheese – your favourite, I like Emmental or Gruyere and sometimes crumbled Roquefort for fancier meals or a starter Place precooked drained cauliflower in ovenproof dish greased with mayonnaise. Mix mayonnaise and chosen cheese together with salt and pepper to taste in a small bowl. Spread or ‘throw’ tablespoons onto cauliflower. Bake at about 150°centigrade until cooked through and nicely toasted, about 15-20 minutes. No one ever believes it is not a true béchamel sauce!

stuffed cabbage leaves

carefully peal several leaves off of a head of cabbage and steam for 3-5 minutes just to soften. in a skillet camelize half of a medium onion in butter with a pinch of salt, remove from the skillet to cool. in the same skillet brown 1 lb of your favorite ground meat (I like ground pork) add toasted sesame seeds and toasted sunflower seeds and season to taste. allow everything to cool to room temp. mix carmelized onion 1 8oz package of cream cheese and 2 eggs and 1 uncooked small red bell pepper (petite diced). take some olive oil and massage it into your cabbage leaves sprinkle both sides with salt and pepper and ground red pepper. put 2 tbl sp of stuffing mix in the middle of leaves and roll and tuck. place in casserol dish edges down pour a can of diced tomatoes on top bake uncovered 30 min on 325. sprinkle with 1/2 c sharp cheddar bake until brown and bubbly. yum, yum, yum

Low carb veggies

I love greens -- from romaine through the lettuces and "bitter" greens (curly endive, arugula, Belgian endive, escarole, radicchio), spinach, chard, kale, collards, and on and on. I like to wash them well using several cool-water baths in my sald spinner with the drainer insert in so that I can pick up the drainer and "souse" the greens up and down to loosen any soil, then I pull the spinner and greens out, empty and refill the spinner with cool water and do it again. Nothing worse than biting down on sand or dirt when during dinner. When I drain the greens again, I have the pan-sprayed Dutch oven on the burner and turn the greens into it, put the cover on and turn up the heat for about 3 minutes, then turn back to medium. I time for about 5 minutes then check on the progress of my greens. If they're wilted, that's the point that I drain them in a colander, put them into a serving dish or back in the Dutch oven and add two or three tablespoons of butter, and salt and pepper. Eat warm.

Olive oil and lemon juice in pan. Cook mushrooms and when done add fresh spinach until wilted. really good.....

i use raw kale and chopped cauliflower and mix in tahini with that it is delicious and so good for you

raw veggie & pork rinds with dip

In 8 oz sour cream add 1/4 cup low sugar salsa and 1/2 package onion soup mix. mix well. slice any low carb vegies for dipping or use barbeque pork rinds as scoops. You can thicken with a bit of softened cream cheese. This is also great over warm low carb cooked veggies.

Great Cauliflower Dish Low Carb Mac and

I have a great recipe which i started making so I could "sort of" have a Macaroni and Cheese dish.....Cook Califlower, cut up in small pcs fill a casarole dish sprinkle with Chilie Peppers (optional) mix in a little butter...then cover it with shredded Tex Mex cheese..til it is covered (like the top of a pizza) somtimes I also sprinkle Parmasean Cheese bake at 350 for approx 20 minutes Very Good. More veggies for the list

Don't forget about Buttercup (not ButterNUT) and Kabocha squashes, they're pretty widely available now (fall seasonal) and make a super puree, soup or as a sub for carb-ier acorn/butternut and other winter squashes in recipes.

Snack Attack!!

In the first few days of a low-carb kick I was mooching around looking for a snack, my roomie suggested stock with vegetables in. So I boiled up some beef stock and threw in some left over broccoli stalks and some spinach leaves. Oh my God, it was so tasty!!!

Broccoli/Rainbow Slaw

I love to use Broccoli slaw or Rainbow Slaw (shredded cauliflower stems, broccoli stems, purple cabbage, and carrots). I'm not a big cabbage fan so I sub this in for any recipe that calls for shredded cabbage. Makes a delicious Asian Slaw!

Twice-Baked "Potatoes"

You will never miss potatoes with this idea. Cook a head of cauliflower until very soft, mash like potatoes and add onions, bacon bits, sour cream, cheese,chives or what ever you like in your twice baked potatoes, put in a sprayed casserole and bake until lightly browned. yummm! I took this to a get together and no one knew it wasn't potatoes.

Cauliflower

I started using cauliflower instead of spaghetti and found that spaghetti sauce on cauliflower with a sprinkle of Parmesan cheese is absolutely delicious and filling and makes a great side dish.

Share veggie ideas: Veggies Salmon

Sautee onions/garlic/celery/tomatoes/green pepper in olive oil, add lots oregano/garlic powder/curry/salt and pepper/top with salmon, cover,15-20 mins: done/yum. Can add red potatoes to veggies. Good with ANY fish.

zucchini cut in slices and fried in olive oil with fresh garlic and pepper. While its steaming hot, add some parmesan cheese on top. Its my new favorite!
