Peanut butter and (any) berries for me!
- No prep time! I'm always in a rush in the AM as I am not a morning person yet I have a full-time day job. So - I usually have the same thing every weekday morning, trying not to ever miss it. The PB is always out on the counter, and the berries (strawberries, raspberries, blueberries, or blackberries - whichever I have on hand at the time - usually always at least one) are in the fridge - I take those out, grab a teaspoon, and in the left hand, I eat a berry or bite of one if it's a large strawberry; in the right, I'm having some PB - right out of the jar! It's just myself and my husband at home, and he doesn't care if I eat PB from the jar. The berries' juiciness and often tartness, and the PB's sweeter taste and texture go perfectly together, and PB is so filling that lunch doesn't have to be until at least 1 PM or later!! Best thing is - no "penalties" weight wise - I'm on maintenance - 8 mos. now - and have to remain devoted to the "low carb way" to maintain, no matter what.

Easy & Delicious Breakfast
- My husband and I have been living low carb for over 7 years. Preparation is the key. We have bacon, eggs, fresh strawberries, fresh blueberries and A prune each for breakfast every morning. How? There is a tray in the fridge with everything on it that we will need the next morning. At night we put out all the frying pans we'll need, we set the table, put water and coffee in the pot. When we get home from our early morning workout at the gym, we prepare breakfast. It takes about 15 minutes start to sitting down. When you eat such a great breakfast every day, you are never hungry during the day. Matter of fact, we sometimes have to remind ourselves to eat lunch! Supper is also prepared in advance. I learned this preparation trick as a young gal working in the dietary department of our local hospital. After one meal, you get everything ready for the next meal. It works great! No stress and lots of good low carb eating!

Somewhat pan fries and egg
- slice thinly(crosscut) broccoli or cauliflower stems(yes the stems only). saute with a little butter. when about half done throw in a Pattie of sausage and a little chopped onion and bell pepper and garlic if you like(I crumble my sausage). Set aside while still hot and place a slice of cheese on top of the sauteed mixture(if your feeling decadent add a little mayonnaise on top of cheese) Fix your egg how you like and place on top of your mixture. Season any way you like. If your really hungry put all of this stuff on top a toasted low carb bread(I use flax bread).I estimate this to be about 4 carbs.

I honestly never get tired...
- Of bacon and eggs. Boiled scrambled, fried, doesn't matter. I eat them almost every morning and savor them like life! Sometimes chipotle sauce with boiled eggs is really good too. Never ever get sick of it, and it's been 4 months!

flax-wheat bran breakfast mix
- Boil one cup water in a large cup or bowl. Add two tablespoons wheat bran, two tablespoons flax seed meal, and one tablespoon soy protein isolate. mix to get smooth texture. Add spices to taste, such as cinammon, cloves, nutmeg, and sugar substitute if desired. Can also mix in berries to make more interesting. Makes a delicious and nutritious low carb breakfast.

Muffin in a Minute
- I made one from the first time this weekend and it was really good, plus it's so easy. This is one receipe I found but there are many variation if you search the web. My mom can't have dairy or gluten and she tried it and said it was delicious. Serving Size: 1 1/4 cup flax meal 1/2 teaspoon baking powder 1 packet splenda packet 1 teaspoon cinnamon 1 large egg 1 teaspoon butter Put the dry ingredients in a coffee mug. Stir. Then add the egg and the butter. Mix. Microwave 1 minute (or more). Take out. slice, butter, eat. Cream cheese would go nicely, too. The shape of this can be changed by making it in a bowl. It can be "toasted" once it's cooked. I replaced the splenda and cinnamon with sugar free syrup.

Easy Breakfast Egg "Muffins"
- This is about as easy/yummy as it gets. Cook 1 pound sausage (I like turkey italian sausage for a little less fat) - drain. Heavily spray 12 muffin tins with non stick spray - divide sausage among each cup. Take about 9 eggs and whip with a few tablespoons of water and no salt seasoning (the sausage is plenty salty enough but this adds some pizzaz!) - pour in each muffin tin. Bake @ 425 for 10-15 minutes or until egg is partially set. Take out and top with 1 tbsp (to taste) of cheese - I prefer sharp cheddar - return to oven for additional 10 minutes or until almost fully set. Remove and ENJOY! These refrigerate super nicely and can be zapped for about 30 seconds to enjoy. I figure 1-2 carbs per muffin for the cheese, no salt seasoning, and minor amounts for sausage.

Egg in a Pita Breakfast
- I pan fry an egg and top with cheese, cut a Joseph's Low Carb Flax, Oat Bran & Whole Wheat Flour Pita Bread - in half & toast it slightly (4g carbs per half), and put the egg and cheese inside - sometimes I add bacon, ham, salsa or ketchup.
