This recipe is better than my regular banana bread recipe. it is very moist and the banana flavor really stands out. Delicious. Highly recommend making this recipe.

I have to say, this is the best low carb banana bread I have ever had. I followed the recipe exactly, but added chunks of sugar free Hershey's dark chocolate. I didn't put the walnuts since I didn't have any on hand. I had a piece right out of the oven and it was so YUMMY!

Baked this as per the recipe except I added 1 tsp vanilla extract. It baked for 45mins and came out perfect. This is delicious served warm with butter. Next time I may cut the sweetener down just a fraction. This is my second day low-carb and it doesn't feel like I'm on a diet at all when I have something delicious like this to look forward to.

Just this morning I made this bread but did substitute a few items: shredded zucchini for bananas, plain apple sauce for oil, and coated the pan with coconut oil. It baked for 47 min and came out of the oven simply fabulous. I have never used almond flour before and can't wait to try other recipes. Plus the leftover shredded zucchini went for ""hash browns"" for my breakfast. YUM!

I have little experience in low carb baking. I ground the almond meal myself (second try) and made according to recipe. I did add a t. Vanilla and probably less salt. Came out looking like muffins. Stickyish like banana bread. Very nice texture and flavor. Really good with cream cheese. Not quite banan-y enough. I made muffins for better portion control. Will make again!

This recipe is fantastic. Our stores in St. Louis, are only carrying green bannanas, and I don't want to wait for them to ripen. I too want to know if we could substitute zuchini, and if so how much or how many?

Although I'm the only one of the two of us that cares at all about banana loaf, I do miss it and will try this! I wonder, though, if one couldn't substitute zucchini and make something even lower carb that both of us could get into. I may try it.
