Caprese Pasta Salad - Basil and Tomato Salad

This pasta salad has all the elements of the traditional Italian caprese salad (plus some capers). I use shirataki noodles to make it low carb. Believe it or not, throwing in a small handful of chopped pecans or walnuts makes a nice addition.

Ingredients:

  • 1 package shirataki noodles (or other pasta) - this makes about 3 servings
  • 1 cup chopped basil
  • 1 medium tomato, chopped
  • 3 oz mozerella cheese, cut into small cubes
  • 1 Tablespoon capers
  • 1 Tablespoon extra-virgin olive oil

Preparation:

Rinse shirataki noodles well in hot water, or prepare other low carb pasta (such as Dreamfields). Leaving the noodles hot when combining with the other ingredients helps to blend the flavors a bit. I also like to cut the shirataki noodles into manageable lengths using kitchen shears.

Toss all ingredients together. Makes three small servings as a side dish.

Nutritional Information: Each serving has 3 grams effective carbohydrate plus 2 grams fiber, 8 grams protein, and 130 calories.
