Lemon Butter Sauce for Artichokes

This is a yummy buttery dipping sauce for artichokes. I like using the Italian herb blend, but others work, too, such as Greek or French herb blends.

Ingredients:

  • 1 stick (½ cup) butter
  • 1 clove garlic or 1 teaspoon garlic powder
  • 1½ teaspoons Italian herb blend or other herb blend
  • 1 Tablespoon lemon juice

Preparation:

1) Melt the butter (microwave works well). If using fresh garlic, add it to the butter as it's melting and continue heating the butter until it butter begins to bubble. This will cook the garlic a little and distribute the flavor through the oil.

2) Add the rest of the ingredients and stir to blend. Let the sauce sit for at least 10 minutes for the flavors to infuse. Give it another shot of heat (just a few seconds in the microwave is fine) before serving.

This is about enough sauce for four large artichokes or six small-medium artichokes.

Nutritional Information: For six servings, each has a trace of carbohydrate and 137 calories. For four servings, each has almost half a gram of carbohydrate and 206 calories.
