When we think about chocolate, we usually think of treats loaded with sugar. But plain chocolate is very low in sugar, and it can have some health benefits, too. Here is a list of recipes, resources, and products for using chocolate in ways that are compatible with a reduced-carb diet. All carb grams quoted next to the recipes are assuming zero carb sweeteners, such as erythritol and liquid forums of sucralose (the sweetener in Splenda).

Candy and Cookies

Easy Sugar-Free Fudge - No cooking! This recipe was a real discovery for me. Each piece of dense, chocolate/peanut butter fudge has only three grams of carbohydrate.

Low-Carb Chocolate Rum or Bourbon Balls - Mixes up in a few minutes, with no cooking. Can use other flavorings if you don't want to use liquor. Only one gram of carb per ball.

Sugar-Free Peanut Butter Cups - Has 2.5 grams of carbohydrate per cup.

Truffles or chocolate sauce can be made from this Sugar-Free Chocolate Ganache Recipe.

Cakes and Brownies

Low-Carb Brownies (aka Miracle Brownies) - Very low-carb (one gram per brownie).

Chocolate Pecan Torte - One of the best things about this flourless chocolate cake is how easy it is to make. Mix all of the ingredients in the food processor for about 5 minutes. Two grams of carb per slice.

Other Desserts

Dark Chocolate Mousse - This mousse is such a rich, silky, intense chocolate hit that you'll probably be satisfied with a small amount.

Egg-Free Chocolate Mousse - This version, without raw eggs, is fluffier and less silky, but it's still full of chocolate goodness.

Bounet - Italian Cocoa Almond Pudding - This is sort of like a flan. It is served in thick slices, each with two grams of carbohydrate.

Other Recipes with Chocolate

Cincinnati Chili - No one will guess the mystery ingredients in this deliciously different chili. Six grams of carb per serving.

Low-Carb Chocolate Products

Most chocolate products on the market have maltitol, which I have refrained from trying because, for most of us, maltitol is as bad or worse than sugar. These products are sweetened with other sweeteners, and I have reviewed them for you.

ChocoPerfection Bars - The best sugar-free chocolate bars I've ever tasted.

Livin' La Vida Low-Carb Bars - These raspberry chocolate bars have a wonderful velvety texture.

Everyday Gourmet Sugar-Free Fudge - Very good and comes in four different flavors.

Carb Counters Brownie Mix - Not as good as my homemade ones, but for a mix, this makes a decent brownie.
