True confessions: I'm not a big fan of instant mashed potatoes, so I may not be the best judge of Instant Mashers by themselves. For me, as a stand-alone product, they ranked with instant potatoes, although some people on our Low Carb Forum like them that way. In my opinion, where they shine is as a stand-in for starchy foods.I like mashed cauliflower as a lower carb alternative to potatoes, but Instant Mashers really improve the texture, making it starchier. They work as a binder in seafood cakes and various croquettes, including crab cakes, salmon cakes, and latkes. They have a similar function in meatloaf. If anyone tries them, let me know how you use them.
