Frankly, it doesn't seem as though it should be so hard to make sugar-free chocolate that is delicious, but I know from my own experiments that it is. I have ended up using erythritol (the sugar alcohol with almost no impact on blood glucose) in a lot of my chocolate cooking because regular artificial sweeteners alone just don't do the trick. Unfortunately, most sugar-free chocolate bars are sweetened with maltitol and other sugar alcohols such as sorbitol that not only raise blood sugar but often cause intestinal upset as well.I'm thrilled to tell you there is a chocolate bar which does not impact my blood glucose, but is truly delicious. It is sweetened with erythritol and oligofructose. It also melts well, and I'm sure could be used in recipes. I particularly like the dark chocolate variety, which has such a rich chocolate flavor that only part of a bar satisfies my chocolate craving.
