Sugar-Free Cream Cheese Frosting

This is a super-easy sugar-free frosting, and it is very flexible, as you can flavor it up any way you want. You have to experiment a bit if you use the caramel flavoring, as each brand is a little different. I would start with half a teaspoon and go up bit by bit.

This frosting goes very well on my Low-Carb Spice Cake. It will cover a 8" or 9" round or square cake in the pan. It is also good as a spread (just don't add the water). I sometimes like to make my Flax Seed Bread with extra sweetener and about a tablespoon of cinnamon. This spread is good on the bread made that way.

Prep Time: 5 minutes

Ingredients:

  • 8 oz package cream cheese
  • liquid sucralose equivalent to about 2/3 cup of sugar (or to taste)
  • 3/4 teaspoon vanilla extract
  • 1/2 - 3/4 teaspoon caramel flavoring
  • 2 tablespoons water

Preparation:

Using a mixer, combine all ingredients and beat until smooth.

For a spread, don't add any water. I use about half the sweetener of frosting when making a spread.

Variations: Try using maple flavoring, or basically any kinds you want!

Nutritional Information: Two tablespoons of spread, or one of eight servings of frosting has less than 1 gram effective carbohydrate plus 2 grams protein, and 89 calories. For one of nine servings of frosting, it's still less than a gram of carbohydrate, 2 grams protein, and 100 calories.
