Pina coladas are usually full of sugar, from the coconut cream to the pineapple juice. This version is sugar-free, but will transport you to the tropics all the same.

Ingredients:

  • 1/4 cup coconut milk
  • 1 Tablespoon lime juice
  • About a can (or somewhat less) of sugar-free soda, lemon-lime type or ginger ale OR sugar-free lemonade

Preparation:

In a large glass, put coconut milk, lime juice, and ice. Fill the rest of the glass with the soda. Amounts can be varied to taste. Small umbrella optional. :-)

Nutritional Information: Each serving has 3 grams effective carbohydrate and 115 calories.

It's Great I had to make a substitution., Member ccoleman.

This is a great low carb recipe! I made one today. I had all the ingredients but coconut milk, so I substituted Silk soymilk with a tablespoon of Coconut extract and a package of sweetner. Still good. A bit tart, but still tasted like a Pina Colada.
