Sugar Free Egg Nog

Low Carb Egg Nog

Egg nog is traditionally made with raw eggs, milk, sugar, and brandy and/or bourbon and/or rum. Some egg nog recipes have lots of alcohol in them - if you want one of those, add more! I think egg nog tastes great with no alcohol at all. Happily, egg nog is one of those recipes that is easy to convert to be low-carb or sugar-free.

Ingredients:

  • 6 eggs
  • 4 cups (1 quart) milk, unsweetened soy milk, or unsweetened almond milk
  • 2 cups heavy cream
  • ½ cup sugar substitute, or more to taste (liquid preferred)
  • ¼ cup brandy
  • ¼ cup rum or bourbon
  • Nutmeg

Preparation:

Traditionally, egg nog is made with raw eggs, which are discouraged nowadays. There are several options: 1) Buy pasteurized eggs, if you can find them 2) Use the recipe to make a stirred custard, using half the liquid and adding the rest of the liquid after the mixture cools 3) Throw caution to the winds and use raw egg, preferably fresh from a farm with a small flock of hens 4) Make fake egg nog by substituting Da Vinci's Sugar-Free Egg Nog Syrup for the egg and sweetener.

Two no-cook methods:

Easy Method: Put all the ingredients into a blender and blend it up. Sprinkle with nutmeg

Traditional Method: Separate the eggs, beat the yolks until light, and the whites until they form soft peaks. If you want, you can even whip the cream as well. Then combine everything with a whisk (don't overmix) and sprinkle nutmeg on the top.

Mmmmm!, Guest shecota

I made this using ""best of the egg"" or egg beaters, instead of the raw eggs, it is pasteurized and found in the grocery store, and I mixed everything up in the food processor, this was so delicious, and very low carb. Next time I would add some more spices that is the only thing lacking.
