The Wonders of Olive Oil

oliveWe've all heard the term "super-food" -- foods that are especially packed with nutritional goodness. Every so often I research one of them to add to the site, and my latest is olive oil. Olive oil is seldom on lists of super-foods, but after spending quite a bit of time researching it, I was simply blown away by the health benefits. Did you know that it is one of the few foods definitively shown to have an anti-inflammatory effect in our bodies? It could easily fill several books (and has), but here's my synopsis of some of the important information about olive oil, including how to select, store, and use it. One idea: Greek Lemon Garlic Salad Dressing, which is great on any vegetable as well as a chicken marinade.
