Low-Carb Honey Cake for Rosh Hashanah

starDoes a a low-carb honey cake sound like a contradiction in terms? I've made this yummy low-carb and gluten-free cake with just a little dark honey for Rosh Hashanah - but it's just as good without it, as a nice, autumnal spice cake. My husband and I have been eating low carb (atkins emphasis) since 1999. We have lost weight, improved our lipid profiles, feel better because our health has improved (never new we were sensitive to wheat and some other foods till we stopped eating it!) We plan to observe this way of life for ever!
