New Low-Carb Videos!
I'm so pleased to announce two new videos available to accompany two of my recipes. Sometimes a series of pictures is worth 1000 words, and now you can not only read my recipes for Caulflower "Rice" and Chicken ala King, but see videos demonstrating how to prepare them.
Cauliflower "Rice" is a great substitute for rice. It's just cauliflower, and it's simple to make. I use it as a bed for saucy dishes such as Thai Coconut Chicken Curry, or use it as the basis for fried "rice" or Chicken Biriyani (an Indian rice dish).

Another great thing to put on top of the Cauli-rice is Chicken ala King. Use leftover chicken or turkey to make this great old-fashioned comfort food.

In Sweden we eat LCHF, Low Carb High Fat. I noticed when she said low fat in the video. Is this right? A low carb diet should be a fat one. We don’t want to live on low-energy. That’s not good for anyone. I will read more, but. In sweden so many people have become very healthy, but we think it is both the low carbs and the amount of fat that’s important. Almost every cell is made of 50% stable saturated fat..
Thanks, Willie, that’s a great question. I had nothing to do with the production or script of the video. My guess is that they put that in there to appeal to a broader range of people. About.com has a lot of different food sites, including Low Fat, Low Calorie, Gluten-Free, etc. I think they probably want to use these on as many sites as possible, even though they were originated from my recipes (incidentally, I had nothing to do with the choice of recipes, either).
The videos are mostly an experiment at this point, and your feedback is really valuable.

…then there’s the refined white flour and milk used in the A La King (low carb) recipe…aarrggh. In the end, the total recipe isn’t truly low carb nor low fat (with the cream and oil in the sauce).
Is Rachel Edelman (in the video) a low carber? A cook? A volunteer? I’m curious.

I agree that that there are some issues with that video, which I didn’t even know was being made. But actually you can use any kind of flour (including whole wheat), or low-carb thickener. White sauces have a lot of different options, see:
