Dr. Weil Cuts Carbs

andrewI found this interesting. On the Web site of Andrew Weil, MD, celebrity author who specializes in natural and preventative medicine, there is an interview with him about what he eats. Here are some quotes:

"I think there is ... a change in my thinking about carbohydrates. In the past five or six years, there has been a real explosion of quality research into the glycemic load and its effect on weight gain and insulin sensitivity."

What did he change? "Mostly, it was eating less bread and pasta, and cutting back on my sugar intake. In restaurants, I would sometimes eat dessert. I don’t do that now."

"I have never felt that saturated fat was as bad as it is made out to be, if it is eaten in the context of a diet that includes mostly monounsaturated fats, plenty of omega 3 fatty acids, and plenty of antioxidants."

There's no doubt about it -- wider acceptance of reduced-carb eating is slowly gaining traction.

Hubby has diabetes and after reading huge amounts of information about diet and diabetes, we decided to use the low-carb diet and see how it worked. We are amazed. Today his blood sugar is in the normal range, this after being up around 585 (almost in a coma) from his high-carb diet of breads, scones, and desserts. Now we both are pleased as punch because he is losing weight (you just don’t feel like eating as much when it’s a good, satisfying protein) but he still gets little treats like BIJA bars with Odo’s oil in them (they are considered candy truffles, and are amazingly delicious). Find them in your larger health food stores in the refrigerator case with the good oils. SO GO LOW-CARB!

I just want to mention that Dr. Weil, whom I read eagerly, does not really advocate a “low-carb” diet (unless, perhaps, your point of reference is the “average” American diet). From the article itself, cited above, his “change in…thinking about carbohydrates” refers not to a change in the quantity of carbs, but rather in the type of carbs consumed. I.e. let the 50% of daily calories he recommends for carb consumption consist mostly of the low-GI variety. I might add that he elsewhere often recommends against high-protein diets.

(That said, Jennifr, I’m glad your husband is doing well.)
