Late Summer Vegetables -- YUM!

Oh how I love the vegetables of late summer! The Farmer's Market, as well as the box I get each week from a local farmer, are bursting with eggplants, peppers, tomatoes, and summer squashes. One of my favorite ways to cooks them up is this Mediterranean Summer Sauteé, which is similar to ratatouille. I made it last week for my family when we were visiting and everyone went nuts over it.
