Low Carb Difficulties?
Perhaps you are a few weeks into your low-carb way of eating -- or perhaps you've been eating this way for a few months or even years. What do you find to be the hardest things about reducing carbohydrate? Taking this poll will help me to determine what kinds of things to add to the site in the coming year. To help you get over the bumps in the low-carb road, I can't think of a better place to send you than to our Low Carb Discussion Forum, where there are lots of people to help you out.

Seven Layer Dip -
It's a classic -- and for good reason. Tastes great, and it's healthy enough to be a meal in and of itself. If you want to make it even lower in carbs, substitute black soy beans for the beans.
Guacamole - Made with freshly-squeezed lime juice and cilantro, this is one of her favorite versions of guacamole.

I love low carb food. I have no problems coming up with ideas for different meals.Even if I were to have to eat cheaper cuts of meat like ox tails or organ meats. I can always make something that I enjoy. What is hard is convincing my family to eat some of my low carb stuff like eggplant lasagna or faux potato salad.However, I am finding that little by little they are lovin’ the food.
I LOVE LOW CARB DIET, ME AND MY SON ARE FOLLOWING IT FOR THE LAST 3 MOTHES AND I BELEVE IT WILL BE MY LIFE STYLE BECAUSE I FEEL MUCH BETTER IN HEALTH,ACTIVITY&MOOD AND OF COURSE I LOST SOME WEIGHT .MY MAIN PROBLEM IS FINDING NEW SUITABLE RECIPES IN ORDER TO CONVINCE MY SON TO KEEP ON IT,..CAN YOU HELP ME? About one year ago I was diagnosed with type 2 diabetes.
Before I was told I had diabetes I went from 145 pounds down
to 92 pounds. I have gained a little weight since then and now
weigh 105 pounds which is borderline unhealthy for my 5′7″ height.
I take insulin to control my blood glucose levels. Even with insulin
If I eat more than about 60 grams of carbs per day I feel tired and
lethargic. So my problem is trying to gain weight with a daily
intake of no more than 60 grams of carbohydrate. That is a diet
of mostly protein and fat (mono & poly unsaturated). This puts me in
a small lonely minority and finding recipes or menus is difficult.
