I live near the central coast of California, where this time of year is the beginning of salmon season. Many people who don't like fish (or think they don't) like salmon, and that's a great thing, since salmon is one of the most nutritious fish on the planet. Did you know that canned salmon has more of many vitamins, minerals, and the very important Omega-3 fats than canned tuna (try my salmon salad recipe)? When I am making up my low carb menus, I often have difficulty making them high enough in Vitamin D and calcium. But if I include a serving of canned salmon it's easy!
