It's Cranberry Time!

I love to see the cranberries in the stores. Usually, I've taken my last bag of cranberries out of the freezer sometime in the spring, and I miss them. Cranberries are now considered one of the “superfoods”, and they aren’t just a side dish for turkey! They can be for breakfast, lunch, dinner, and snacks in between. Tasty, low in carbs, high in fiber - what's not to like?For example, there's my super-simple sugar-free cranberry sauce. You might think cranberry sauce is "married" to a turkey dinner, but it's great with yogurt (breakfast or snack), cottage or ricotta cheese, as a contrast to hard cheeses, or next to pork, chicken, or eggs. One of my favorite ways to make a cocktail festive for the holidays is to make a standard dry vodka martini, add just a teeny tiny splash of cranberry juice cocktail (a little flavor without tons of carbs), and skewer several cranberries, using them as a garnish and flavor element. Beautiful and delicious!
