high I've come to Part Five of my series about understanding carbohydrates. The big revelation to me in writing this series has been what is going on inside our digestive systems when we eat different types of carbohydrate. For example, I have come to think of our colons as a whole other world, where battles are pitched, products are manufactured, and there are bacteria who need our protection and nuturance. This week, it's all about fiber, which takes center stage when it comes to colon health. Fiber has additional benefits to those of us eating a low glycemic diet, as it helps keep blood glucose levels more stable. So come learn the surprising facts about fiber.
