Low Carb Pasta?

When people think about low carb diets, they often focus on “not being able to live without pasta”. And yet, few of them love pasta so much that they would eat it plain. This is because pasta is mainly used as a vehicle for other flavors. Unfortunately, this particular vehicle is a starch that turns to sugar as soon as it gets inside the body. So the challenge becomes finding another vehicle, and hopefully one that has more nutrition, more flavor, and even fewer calories. Photo of Spaghetti Squash by Tammany
