Recently I’ve been getting some questions about shirataki noodles, and requests for recipes. These noodles are pretty amazing. They have basically zero carbohydrate, as they are almost entirely fiber. (Tofu shirataki noodles, pictured here, have a little carb.) So where do these amazing noodles come from? I tried the Shiritaki noodles for a noodle salad type dish with peanut sauce, and I was very pleased with them. For Italian pasta dishes, Dreamfield’s pasta is also a great product for lower carb eaters.

We’re having an interesting discussion about Dreamfields in the . It seems that the experiences with that pasta may be influenced by whether it is cooked in an acid sauce such as tomatoes! News to me!

Here’s my recipe for Shiritaki Noodles with Veggies and Peanut Sauce. It was really good.
As far as the Dreamfields question, I’ve heard all kinds of rumors about it. I’m not a diabetic, so I don’t know about that, but I do know I’ve been eating it ever since I started eating the lower carb way, and it doesn’t seem to make me gain weight no matter what sauce I use.
are shirataki noodles wheat free/gluten free ?
Yes, they are entirely free of any kind of grain at all.
This is my own delicious recipe:
Shirataki Noodles- drain and then soak in chicken broth 10 minutes, then drain again
Chop: celery, cilantro, garlic and green onions
Drain a can of sliced mushrooms, asian veggies and a can of bean sprouts
Mix all ingredients together- add salt & pepper and enjoy!
Are these noodles filling? If they are, they are almost too good to be true. Are they con sidered a starch? Thank-you.
